Homemade Banana Bread

This recipe is perfect for using up your old bananas and it’s wonderful with a cup of tea on a cold January afternoon.


  • 8oz self raising flour
  • 1tsp baking powder
  • 6oz margarine
  • 6oz caster sugar
  • 2 eggs
  • 3 bananas
  • 50g dark chocolate chips
  • 1tsp cinnamon
  • 1tsp nutmeg
  • Pinch of salt

Get ready… this is going to require quite a lot of washing up!

Grease and line a 2lb loaf tin. Set your oven to 170 degrees celsius (150 fan). You need to cook this one low and slow to avoid the outside being burned and the middle not being done (past experience… I’m not bitter).

In a large bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.

In another large bowl, cream together the margarine and the sugar until light and fluffy.

Beat one of the eggs into the butter/sugar mixture, add some flour, and repeat. Once the eggs are fully mixed in, add the rest of the dry ingredients (except the chocolate chips!).

In a small bowl, mash up the unpeeled bananas. If you want some chunks of banana, use a masher, if you want it smoother, use a fork.

Mix the banana into the cake mixture. Finally, add the chocolate chips. Add your mixture to the loaf tin and use a palette knife to level.

Bake for 1 hour 15 mins to 1 hour 30 minutes. The loaf is cooked when a knife or cake tester comes out clean.

Leave the loaf to cool before taking it out of the tin, and enjoy with a cuppa.
